Rob launched Hoja Santa as head chef. Also in Barcelona, the restaurant gained a Michelin star just a year after opening. During this time Rob also helped Tony create the menu for 69 Colebrooke Row in London. Rob and Tony joined forces in 2016 to open Untitled in Dalston, and what was meant to be a short-term consulting project for Rob turned into a full-time role as Chef Director. In 2018 Rob joined Tony to launch Gazelle, where he oversees the menu as Head Chef.

Fascinated by cocktail mixology, which he worked on with Heston Blumenthal for many years, Tony’s unique perspective on the art of cocktail making sets him apart from the rest.
