Originally from rural Dorset, Ashley joined Heston Blumenthal at The Fat Duck in Bray in 1999. He quickly rose through the ranks and has been a key member in the Group’s expansion since. His inherent artistic eye for detail, coupled with a formidable enthusiasm for research and creativity, has seen him accomplish, side by side with Heston Blumenthal, the historic British inspired dishes at the 2 Michelin starred Dinner by Heston Blumenthal in Knightsbridge.

Ashley Palmer Watts is currently Chef Director of Dinner by Heston Blumenthal and overseas development in both London and the Melbourne restaurant, which opened in 2015.
